Rolo Cookies

Recipe:

Cookies: 
24-28 rolos 
1 box devil's food cake 
2 eggs 
1/3 cup vegetable oil (can substitute for coconut or canola) 
Optional: Coarse sea salt 

  1. Preheat to 350 
  2. Unwrap all the rolos 
  3. Combine cake mix, eggs and oil 
  4. Take a piece of dough and flatten it in your hand 
  5. Put one rolo in the middle and fold the dough around it 
  6. Line a baking sheet with parchment paper 
  7. Bake for 10 minutes 
  8. If you want, sprinkle the tops with sea salt 

White Chocolate Crispies

Recipe:

White Chocolate Crispies:
2 packages white chocolate chips
4 cups rice cereal
1 cup peanut butter
3 cups mini marshmallows


  1. Pour marshmallows and cereal into a bowl and set it aside 
  2. Put the chocolate chips and peanut butter in the microwave until melted 
  3. Pour chocolate mixture over the marshmallows and cereal 
  4. Combine until everything is coated 
  5. Drop spoonfuls onto wax paper and let them cool for 5-10 minutes 

Gluten Free Peanut Butter Cookies

Recipe:

Cookies:
1 egg
1 cup peanut butter
1/2 sugar
1/4 tsp baking soda


  1. Preheat oven to 350 
  2. Combine all ingredients 
  3. Make 1 inch sized balls 
  4. Line a baking sheet with parchment paper or lightly spray it with cooking oil 
  5. Using a fork, make a criss-cross pattern and flatten the dough 
  6. Bake for 8-10 minutes 
  7. Let them cool for 10 minutes so they can set

Strawberry Lemon Rice Crispies

Recipe: 

Rice Crispies: 
2 tablespoons coconut oil
10 ounce package of marshmallows
Juice and zest of one lemon
5 cups rice puffs
3/4 cup freeze dried strawberry pieces

Optional: Add 2 tablespoons beet juice for color


  1. Melt oil in a saucepan 
  2. Add marshmallows 
  3. Stir over medium heat until melted 
  4. Add lemon juice and zest (beet juice also) 
  5. Remove from heat  
  6. Add rice puffs and strawberries 
  7. Press into buttered pan (9x9)

Strawberry and Cream Tarts

Recipe:

Tarts:
15 miniature phyllo cups, thawed
1/2 cup vanilla Greek yogurt
1/2 cup frozen whipped cream
1 tbsp vanilla creamer
1 cup strawberries, diced


  1. Mix yogurt and coffee creamer together 
  2. Fold in whipped topping 
  3. Pipe or spoon a small amount of the custard into the cups 
  4. Top with diced strawberries

Fat Tuesday Desserts!!

Here is another recipe to make for Fat Tuesday!

German Chocolate Wafer Cookies: 
1 14 ounce package chocolate cream filled sandwich wafer cookies
1 16 ounce can of chocolate frosting
1 15 ounce can of coconut and pecan frosting


  1. Place cookies on a wire rack over wax paper 
  2. Melt the chocolate frosting 
  3. Dip each cookie halfway in the chocolate 
  4. Top each cookie with a tsp of the coconut pecan frosting. 
  5. Drizzle the top with any leftover frosting

Fat Tuesday Desserts!

In honor of Fat Tuesday, I have two indulgent recipes for you to try out, and they still are under 30 minutes and only take 5 ingredients or less!!

The first one is a Caramel Cookies and Cream milkshake.

Milkshake: 
1/4 cup cream
1/4 cup caramel sauce
1/4 cup crushed chocolate cookies
1/2 cup milk


  1. Whip the cream 
  2. Add in caramel sauce and whip it again 
  3. Add cookies, mix 
  4. Add milk, mix 
If you want a creamier or lighter milkshake, increase or decrease the amount of cream/milk to make it to your liking. For example, if you want it lighter, decrease the amount of cream and add more milk instead. 

If you want a cookies and cream milk shake, just remove the caramel.

The second dessert is a Rocky Road Parfait. 


Parfait:
1 4 serving size package of chocolate instant pudding mix 
2 cups milk 
1/2 whipped cream 
1/4 cup chopped unsalted peanuts 
1/4 mini marshmallows 

  1. Prepare pudding mix as according to the package using the milk 
  2. Remove 3/4 of a cup of pudding and mix in the whipped cream 
  3. Divide the rest of the pudding among as many serving glasses as you would like 
  4. Top with the whipped cream pudding mixture 
  5. Let it stand for 5-10 minutes until set 
  6. Top with peanuts and marshmallows

Pecan Pie Muffins

Recipe:

Muffins: 
1 cup brown sugar
1/2 cup flour
2 cups chopped pecans
2/3 cup butter
2 eggs


  1. Mix sugar, flour and pecans together 
  2. In another bowl, mix butter and eggs 
  3. Spray muffin tins with non-stick cooking spray 
  4. Combine all the ingredients together 
  5. Fill about 2/3 of the way up 
  6. Bake for about 13 minutes at 350 
  7. Make sure they are done with a toothpick 




Ritz and Rolo Sandwiches

Recipe:
Sandwiches: 

I bag Rolo candies
1 box (4 rolls) ritz crackers


  1. Preheat oven to 350 
  2. Place crackers on a baking sheet, salt side down 
  3. Unwrap one rolo for each cracker 
  4. Bake for about 3 minutes 
  5. Right after taking them out, put another cracker on top 
  6. If you want the filling to be firm, stick them in the freezer for ten minutes 



Cookies from Cake Mix

Recipe:

Cookies: 
1 box cake mix (any flavor you want)
1/3 cup vegetable oil
2 eggs


  1. Preheat oven to 350 
  2. Spray cookie sheets with non-stick cookie spray 
  3. Mix all ingredients together 
  4. Drop about a tablespoon onto the cookie sheet about 2 inches apart 
  5. Bake for 9-11 minutes
